Yankees Cake!

Edited to add that I actually wrote this last night and just realized I phrased everything all funky since you’re just reading it this morning.  Whoops!

I am absolutely exhausted and am thinking the big crash and burn might happen soon.

Last Friday was a big PTO event for 500+ kids that I was on the committee for… it went splendidly, la dee da and then we moved on to the Brain Tumor Walk on Saturday.  I was excited to have the day at home on Sunday even if it did mean helping to shovel and spread 5 yards of mulch.  Oh my, squatting thighs!

Now here we are at the beginning of a regular school/work week and I have been on my feet since 7:00 this morning.  Some of my dad’s extended relatives (that none of us have ever met) are going to be at my house tomorrow at 1:00. I will be at work, which means everything needs to be spot on before I head to bed tonight (it also means my 57 year-old father is having a slumber party here tonight, so he can be here when they arrive).

Today should be a lesson I take to heart… it is not okay to clean only when company comes.  You will wear yourself out and be too exhausted to even smile.

I have ready to go… 10 lbs. of chicken salad, black bean and corn salsa, honey lime shrimp and avocado salad, bacon wrapped jalapeno poppers, lemon brownies, a strawberry and buttercream layer cake,  and lots of Mike’s for myself.   My sisters are bringing an asparagus tart and a white bean and goat cheese salad.  It’s a regular old Tuesday evening feast!  What you don’t all eat like this on a Tuesday??  We do nothing in moderation.

Soooo… all this to say that since I’m so beyond tired, I thought I’d show you guys a cake I made a little while ago.    Play ball!!

I’m off to bed while my dad watches the bread in the oven. Then I can take a day off to breathe before I plan a luncheon for 120 people on Monday. Yeehaw!!
