I’m actually not the biggest hot dog fan around. I can see if you go to a ball game (maaaybe once every 3 years), or occasionally when my daughter makes macaroni and cheese with hot dogs and I’m trying to be a good mom and eat them with her. But overall, nope, just not a hot dog fan. But grilled over an open flame changes all the rules! And, of course, the right toppings. These Tex Mex Hot Dogs are so delicious and filling that we’ve had them twice more since I made them originally!
I’m pretty sure 3 times in about 6 weeks is a record for me! The best part of a recipe like this is it helps you use up leftovers. I’m big on not wasting leftovers around here, and we always seem to have some.
So grill up an extra ear of corn for dinner and then the next night, you can use it to top these Tex Mex hot dogs. If you’re making a corn and black bean salsa, set aside a couple tablespoons of chopped red onion and cilantro, so you have it ready to go for your hot dogs.
Think ahead, plan ahead, prep ahead… and all your meals will go so much faster! Promise!
But even if you don’t happen to have any extra ingredients laying around in your fridge, you still need to make this. It’s such a great medley of ingredients and a great way to jazz up a plain, ole hot dog.
Especially if you’re having a party or BBQ… TRY THESE!! So easy to line up the rolls on a platter, fill with the grilled hot dogs, add the toppings and then drizzle the avocado sauce over all of them at once. Makes the prep work go smoothly and the presentation for your guests looks amazing!
Plus, it’s a low-cost meal to feed a bunch of people… or 4. Sometimes my family of 4 can feel like a bunch of people!
Tex Mex Hot Dogs
Ingredients:
8 hot dogs
8 hot dog rolls
1 ear roasted corn
1/4 cup tomatoes, diced
1/4 cup red onion, diced
3 tbsp. cilantro, chopped
Directions:
Light your grill or fire pit and allow it to warm up. Cook your hot dogs until done. Place in rolls, top with the toppings of your choice and drizzle the avocado cream over it!
I really just guestimated on the amount of each ingredient above, because I know everyone likes when I give specific measurements. This really is one of those recipes, though, that you can just add the ingredients to taste. If you love tomatoes… add more. Not the biggest onion fan… add less.
The Avocado Cream is a specific recipe (and well worth it!), but the rest is really up to each individual person!
And you can complete your whole meal by adding a side of Baked Beans with Bacon. I get asked for this recipe every time I take it somewhere and it is always devoured (even by people who say they don’t like baked beans)!
You always need to have a side salad, and this Broccoli Cauliflower Salad is perfect. Whips together in just a few minutes, you can make it ahead of time (in fact, you should so the flavors meld!), and doesn’t use the hot oven!
Add in some easy Chocolate Chip Cake Bars…
and some Wine Slushies for the adults, and I think I just planned your entire menu for you! You’re welcome!
But whatever you do, make the Tex Mex Hot Dogs. They will completely change how you think about hot dogs!
