Tart Lemon Bread

Challenges scare the crap outta me.  And yet I keep on entering them!!  
 
I had to, though, the theme was LEMONS!!! 
 
I mean come on… lemons are one of the best thing ever!  So you know what I did, I went and 
created a recipe that doesn’t even have one lemon in it.  Uh, yes I did! And it’s pretty good, if 
I do say so myself.  Just make sure nobody has a camera when you’re eating it because you 
might get caught puckering with the tartness of it all and we wouldn’t want anybody to 
think you were caught duck-facing it. Not a good look on anybody.  True fact.
 
I hope I don’t get kicked out of this lemon challenge since I’m going and entering a lemon-free recipe, but here’s the beauty of it… you don’t need to keep fresh produce on hand and you can whip this up REALLY quickly even if you happen to forget that the challenge is the very next day (not that that would ever happen to me since I’m so on the ball with life and everything.)

 

 

Tart Lemon Bread

  • 2 eggs
  • 1/2 cup vegetable oil
  • 3 tbsp. plus 1/3 cup frozen lemonade concentrate
  • 1 1/2 cups flour
  • 1 cup sugar
  • 1 tsp. baking powder
  • 1/2 cup milk

In a bowl, combine the eggs, oil and 3 tbsp. lemonade concentrate.  In separate bowl, combine the flour, sugar and baking powder.  Add the flour mixture to the egg mixture, alternately with the milk.

Pour into a greased, 8x4x2 in. loaf pan.  Bake at 350 for 55-65 minutes or until a toothpick inserted in center comes out clean.  Drizzle remaining lemonade concentrate immediately over the top of the hot bread.  Cool for 10 minutes and then remove from pan to a wire rack to cool.  Enjoy!!

And if you need to, go ahead and put some lemon zest in there!  What the heck, live on the edge!

Love this bread! It's about fresh lemons, it's about featuring lemon flavor...at least that's what the tv chefs do, right? Hehe. I'm totally guilty of pucker face no occassion, but lemony happiness makes the face worth the flavor. Thanks so much for joining GYCO. We hope you'll be back for round 2 in July.
