Shrimp & Avocado Salad

I have a couple recipes I’ve made recently that I still need to share with everybody, but yesterday I started thinking about how I need to lose weight and get in shape, so I thought I’d share one of the healthier recipes as opposed to more baked goods or bacon-wrapped anything!
 

 

 

 

I made this Lime Shrimp and Avocado Salad last week when we had family from out-of-state visiting and it was so quick to whip together, looked nice and was very light and refreshing!

Lime Shrimp and Avocado Salad
 

 

About 6 cups of mixed spring greens
1 lb. large raw shrimp, peeled and deveined
Newman’s Own Light Lime Dressing
2 fresh California Avocados, sliced
1 medium red onion, thinly sliced*
 

 

Marinate the shrimp in about 1/2 cup of the salad dressing for about an hour or longer if you have time.  Grill shrimp on kebab skewers for about 2 minutes per side until no longer pink.   Assemble your spring greens, sliced avocado, sliced red onion and grilled shrimp.   Add more salad dressing to taste and you have yourself the perfect summer salad!!
 

 

I always slice my onion with the thin blade of my mandoline slicer because then the kids don’t think mommy’s having a nervous breakdown with all the tears and you get perfectly even slices in no time!I was serving a pretty big group so I would guess that this made about 10-12 servings.

Natalie...this looks fabu!!! And I have all these ingredients in my frig...looks like tomorrow's lunch for me. I am such a salad junkie...thanks for sharing. Happy Mother's Day and have a wonderful weekend!!!

I wish you were doing Weight Watchers like me. Then all your fabulous recipes would have the points figured out for me! LOL

Best of luck on your diet. It's hard but once you get on a roll (pardon the pun), you get used to it. I've lost 21 since mid March on WW.

This sounds delish! Love Newman's dressings but I haven't tried this. Thanks for the recipe!
