This peanut butter sandwich cookies recipe is loaded with Reese’s Pieces and filled with a peanut butter icing. A delicious cookies that’s perfect for parties!

It’s no secret around here, that my family is pretty obsessed with peanut butter. There was a short time there where my daughter was convinced she didn’t like it. But we set her straight and kept persisting, and I’m happy to report that she is now as much of a peanut butter lover as the rest of us!

Which means we can keep making our peanut butter s’mores pizza, peanut butter pie and especially our favorite peanut butter sheetcake!

I’m not kidding. If you’re a peanut butter lover and you haven’t made the peanut butter sheet cake yet, then you’re failing at life. I know it looks like nothing, but it is everything. Everything. I use this as a reward when my kids do well in school or sports. It is a no-fail favorite that tastes incredible!

But back to the main attraction of today’s post, these glorious peanut butter sandwich cookies! These obviously require one step more than your regular cookie, but you’ll understand why it’s worth it once you bite into that buttery buttercream filling.

For the cookies, this recipe calls for using Reese’s Pieces since there’s no such thing as too much peanut butter. If you don’t have Reese’s Pieces on hand, though, don’t let that stop you from making these cookies. You can use M&M’s, peanut butter chips or even chocolate chips in their place.

Heck, you can even just make the chocolate cookies if you want without any add-ins! That won’t make or break the cookie since you’ll still get the heavenly chocolate/peanut butter combo with the frosting.

How to Make Sandwich Cookies

The key to a great looking sandwich cookie is making sure that your cookies are pretty uniform in size. This way the tops and bottoms match and you don’t have a lot of the filling seeping out from one end.

You can get semi-uniform cookies by rolling them by hand, but they won’t be completely consistent. The best way to make sure your cookies are the same size and shape is by using a small cookie scoop. This is the exact one that I have and that I’ve been using for many years now. It never fails to provide you with a uniform cookie! It also helps ensure that all the cookies on your sheet bake evenly.

Tools Needed to Make Sandwich Cookies

A little note about the silicone baking mats… they are amazing! If you’ve never used them before, I highly recommend you give them a shot. Especially for how cheap they are. You will save so much money on baking spray and foil just by using these to line your pans instead! They are so easy to clean (and dishwasher safe) and better for you too! Try them!!

For the pastry tips, the set I linked to above is a great starter set. The large open star is the one that’s shown in the pictures for the cookie filling. You can also use the large open hole tip for a change of pace. The picture above shows some good examples of the results you’ll get from the different tips.

Peanut Butter Sandwich Cookies Recipe

Chocolate Peanut Butter Sandwich Cookies

Loaded with Reese’s Pieces and filled with a peanut butter frosting, these chocolate cookies are the ultimate treat! 

Cookies

  • 1 1/2 cups flour
  • 1/2 cup cocoa powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 1/2 cup unsalted butter (softened)
  • 1/4 cup creamy peanut butter
  • 1 tsp vanilla
  • 1 egg
  • 2 tbsp milk
  • 1 cup Reese’s Pieces

Peanut Butter Frosting

  • 1 cup unsalted butter (softened)
  • 1/2 cup powdered sugar
  • 1/4 cup creamy peanut butter
  • 1 tsp vanilla
  • 2-4 tbsp heavy whipping cream

Cookies

  1. Preheat oven to 350 degrees and line a cookie sheet with silicone baking mat or parchment paper.
  2. In a medium bowl, combine the flour. cocoa powder, baking soda and salt.
  3. Using a standing mixer, cream together the butter, sugar’s and peanut butter until smooth and creamy.Mix in the egg and vanilla and mix until combined.
  4. Stir in the dry ingredients until blended. Mix in the Reese’s Piece candy.
  5. Using a small ice cream scoop, scoop out some dough and roll into a ball.Place onto the cookie sheet and slightly push down with the bottom of a glass cup.

    Bake in the oven for 10-12 minutes.

  6. Let cool completely while making the frosting.

Peanut Butter Frosting

  1. Using a standing mixer, combine all ingredients and mix until smooth and stiff peaks form. 
  2. Place the tip into your pastry bag. Scoop the frosting into the piping bag and set aside

Decorating Instructions

  1. Pair up the cookies to a cookie that closely matches its shape and size.Once you have matching cookies take the bottom cookie and pipe a tablespoon size dollop of frosting onto the middle.

    Place the top cookie onto the top of the frosting and slightly push down.

Feel free to replace the Reese’s Pieces with M&M’s, peanut butter chips or chocolate chips.

I highly recommend using a silicone baking mat! You’ll fall in love with them and wonder why you didn’t get them sooner!
