Hello! My name is Evelin and I can be found on my baby blog called Sweet Song Bird. I am a mother of three, a wife, a nursing student, and in love with finding ways to make this crazy life a little bit easier. Ok, I lie, most of the time I just further complicate it since I can never stay away from trying everything at least once! 😉 I am new to blogging, and began blogging in order to organize my ideas as well as share my trials, errors, and successes with other women just like me!
Since Natalie has so graciously allowed me to guest post, I decided to share with you one of my gluten free recipes. I have been gluten free (GF) for over 10 years, and my kids are also GF. I have to specify that we are GF for medical reasons. If you are thinking of adopting the GF lifestyle, it doesn’t hurt to speak with a professional first! 🙂
A few weeks ago, I found myself on Pinterest (surprise, surprise) and saw some awesome pizza muffins! I thought I’d try and make them but of course GF! I’ve been trying something lately, it’s called NOT making EVERYTHING from scratch, again just to simplify my overly-complicated world! 🙂 So I bought some GF Bisquik and decided to create a semi-homemade recipe for GF Pizza muffins!
First of all, follow the indications on the back of the box for biscuits, EXCEPT substitute BUTTER for the oil, then add the following:
3tbs of Sour Cream (I add sour cream to every GF baked goods recipe, as it helps to add some moisture and gives the bread a better consistency)
1/2 c of grated Mozzarella Cheese
1/4 c of grated Parmigiano Reggiano
2 tsp of tomato sauce or Marinara
1/2 c of chopped up Pepperoni (or other topping if you don’t like this one)
A pinch of dry oregano
A pinch of dry Basil
Bake according to the instructions on the box and in about 20 minutes you will have amazing, cheesy and gooey Pizza muffins! Tip: Make a double batch and freeze in individual servings for quick after school snacks. Warm them up in a small toaster oven and serve with some marinara! ENJOY!

:) Thank you!! Yes, I do it all the time...with my cakes I usually add 1/2c of Sour Cream per 2c of GF flour blend...Thanks for the love Nat! :)
