These Buffalo Chicken Dip Bites are the perfect appetizer recipe! Loaded with shredded chicken, cream cheese, hot sauce and cheddar cheese, they are an easy party appetizer! As a bonus, they’re also gluten free and keto-friendly!

Really early in my blogging years, I made some Buffalo Chicken Baked Meatball type things that were one of my most popular posts for a couple years! And with good reason, because they were delicious!

The problem was, they were so labor-intensive that I never felt like making them again! I mean, I was hand-rolling every one and then triple dipping in flour, egg and bread crumbs. It was messy, time-consuming and not gluten-free at all!

But they were so good! Combine that with the fact that I’m a sucker for anything bite-sized, and I knew I wanted to try a new version of this recipe. Moon Cheese was the perfect gluten-free replacement for the panko bread crumbs!

If you aren’t familiar with Moon Cheese, you are missing out! It’s 100% cheese that is dehydrated into a flavorful and crunchy snack! The perfect replacement for my daughter’s obsession with cheesy crackers, and I don’t mind one bit because they’re healthy!

They’re also really filling which means she doesn’t need as many to fill her up, and I’m counting this as another Mom win!

And as much as we all like to snack on these now, I also wanted to try them in some of our favorite recipes. I love the crunch and flavor they add to the top of casseroles, baked mac and cheese and new recipes like these Buffalo Chicken Dip Bites.

How to Make Buffalo Chicken Dip Bites Recipe

I started by placing some chicken breasts in my Instant Pot and cooking them for about 12 minutes. It’s the fastest way to make shredded chicken and I am absolutely in love with how easy and fast it is! Plus your chicken comes out tender and juicy every single time!

While your chicken is cooking, you can get the rest of your ingredients ready. This recipe uses exactly one full bag of Cheddar Moon Cheese.

Before I ever opened the bag, I used a rolling pin to crush them into finer crumbs. You could also crush them through a small food chopper if that’s easier for you. I didn’t want mine completely crushed, so I left them a little coarsely chopped.

In a mixing bowl, add your cream cheese, hot sauce, shredded cheese, garlic powder and egg. Mix well until thoroughly combined. As soon as your chicken is ready and shredded, you can just add it to this bowl and mix it in as well.

I used a miniature muffin tin that I sprayed well with cooking spray. If you don’t have a mini muffin tin, I’m going to beg you to get one! I think a lot of people resist because they think it’s just for cupcakes, but I use it all the time for appetizers! It’s the perfect size for bite-size snacks like these buffalo chicken bites!

I got exactly 36 Buffalo Chicken Bites out of this recipe (or 1.5 pans). I put enough of the chicken mixture in each opening to come pretty close to the top ridge. You don’t need to press down at all. As it’s baking, the cheeses will melt and it will settle into the perfect shape.

After you have each opening filled, sprinkle with your Moon Cheese crumbs. I love the addition of more cheddar flavor they add and they way they melt into the chicken bite but still keep that nice crunch. It was pretty much exactly what I was hoping for!

Bake at 350 for about 15-17 minutes. I let them cool in the pan for a few minutes and then gently lifted them out with a knife so I could use the pan for the next batch.

You definitely want to serve these warm, but feel free to make ahead too! They reheat really well in the microwave!

I also tested some in the freezer and they froze beautifully too! You guys know how much I love my freezer meals, so I can prepare stuff ahead of time! I just set them in the refrigerator the night before and then reheated in the toaster oven the next day when I was ready to eat them.

They tasted just like everyone’s favorite buffalo chicken dip, but even better with the addition of the Moon Cheese topping! Dip them in some bleu cheese dressing and you’re golden!

Buffalo Chicken Dip Bites

These Buffalo Chicken Dip Bites taste just like the classic buffalo chicken dip recipe, but they’re the perfect bite-size party appetizer! With a crunchy cheese topping, they’re also gluten-free and keto-friendly!

  • 3 cups Shredded Chicken
  • 1/2 cup Buffalo Wing Sauce
  • 4 oz. Cream Cheese (softened)
  • 1/5 cups Cheddar Cheese (shredded)
  • 1 tsp Garlic Powder
  • 1 Egg
  • 2 oz Moon Cheese (cheddar)
  1. Preheat oven to 350 degrees. Spray a mini muffin tin with cooking spray and set aside.
  2. In a mixing bowl, mix cream cheese, wing sauce, shredded cheese, garlic powder and egg. Stir well to combine. Add shredded chicken and stir.
  3. Fill each muffin tin with shredded chicken mixture almost to top.
  4. Coarsely crush the Moon cheese until you have rough crumbs. Sprinkle on top of chicken mixture.
  5. Bake for 15-17 minutes until golden brown. Use a knife to gently remove from tin. Serve warm with bleu cheese dressing.

This recipe makes 36 Buffalo Chicken Dip Bites. Enough for for 2 bites each for 18 servings total.

Okay, these are FABULOUS! I just finished making them so they would be ready to heat and serve for Christmas lunch and had to give one a try. WOW! Thank you so much for sharing this recipe! For those who are hesitant because you don't have Moon Cheese in your pantry, I did order some in from Amazon, but I'd go ahead and give them a try without if that's what's stopping you. They just add some crunch. Or you could use crackers or breadcrumbs. I cook for gluten free folks so I wanted to make it special. I was also cooking for young kids, so I left the buffalo wing sauce out and just added a spicy dipping sauce to the options for adults. Still yummers!
