My first time making bacon jalapeno corn fritters, and I will love them forever.
Please don’t think I’m being excessive with my declarations of love. I could sing the praises of these little delectable morsels for years to come and it still wouldn’t touch on exactly how much I love them.
I’ve shared my love of corn before, but I don’t think I’ve ever had an open discussion with you about cornmeal. Cornmeal, cornmeal… it’s the unsung hero in so many of my recipes!
If you don’t always have a bag of cornmeal in your pantry, you are missing out, my friend. It’s so versatile and can be used in everything from breakfast to entrees to sandwiches to desserts. And, yes, in appetizers too! It’s one of those rare ingredients that’s high in nutrients and really changes the way an entire dish can taste!
Because of it’s versatility, it’s also one of those ingredients that you’ll find in kitchens all over the world! Including mine, remember. Including mine. My kitchen looooves cornmeal. I dust pans with it, I sprinkle it over bread before I bake it, I coat fish in it for an extra crunch, I make the beeest homemade corn bread and so much more.
Right now, walk over to your kitchen counter and add it to your grocery list. Seriously, you won’t regret it.
And you won’t regret making these Bacon Jalapeno Corn Fritters either. It’s a flavor explosion in your mouth. A good one that is. A fantastic flavor explosion.
The pictures in this post are of the appetizer size corn fritters. These would be perfect for a party! The batter can be made up to two days ahead and stored in the fridge. You can even fry the fritters ahead of time and just reheat them in the microwave! Plus, they taste just as delicious at room temperature as they do hot!
Of course, you can also make them larger and have as a side dish for a meal as well!
