There are some things in life that never seem to change. Birthdays just keep rolling around, Christmas always makes me feel like a kid again, I’m 36 and still get pimples, and my husband wants to eat lunch every single day. Seriously, it’s like the man can never skip a day here or there. Makes no sense to me, but I try to keep him happy.
He packs all his own lunches, but I try to keep up with the grocery shopping and his little lists he leaves me for me. Lately, the lists have been saying something along the lines of, “I can’t eat any more bread with something shoved between it. I would kiss you if I had something other than a sandwich for lunch.”. Yeah, something along those lines.
Since I love the guy, I try to keep this in mind when I’m grocery shopping. Now that it’s colder out, I’ve been trying to find some warm lunches for him. He works outside all day, but still has access to the microwave in his job trailer. This tortilla soup is perfect, because I can mix up a huge batch at once and all he needs to do is add water, microwave it and it’s ready in 5 minutes! He doesn’t have a lot of time for lunch, so this fits the bill!
All I have to do is portion it out into individual baggies. He can keep these at work with him and make them as needed!

You can also use this recipe as the label for a mason jar that you fill up with baggies of the soup mix and give to someone as a gift! I know my husband would appreciate something like this so much more than a plate of cookies! Yes, I own my own bakery, but I rarely bring things home with me and it’s even more rare that I feel like baking at home anymore! But, alas, I still enjoy eating sweets! This Chocolate Espresso Cake-in-a-Mug is perfect because I whipped it up in about 3 minutes, it was just a single serving so I wasn’t tempted to eat more and it was delicious!
I sprinkled a little powdered sugar on top of mine, but it would also be delicious with vanilla ice cream or whipped cream. Best part for me was that there was barely any clean-up!

An added bonus of these two recipes is that they were both made in the microwave! You didn’t have to heat up your oven or stove just to make a single serving. That’s often one of the most time-consuming parts of making a recipe. If you think about making a cake, it could take 10 minutes to pre-heat your oven and then the cake has to bake about 35 minutes on average. That’s about 45 minutes your oven would have to run (and you would have to wait!) versus just popping this Chocolate Espresso Cake recipe into your microwave for 90 seconds! Seriously, 45 minutes compared to 90 seconds! Your stomach will thank you and your electric bill will thank you!
